Allergen program

Food safety is a top priority.

At King Arthur, food safety is a top priority. Along with our production partners, we always meet or exceed best-in-class food safety practices when preparing King Arthur Baking Company brand foods, employing methods designed to prevent unintended contact between major allergens and our ingredients, flours, blends, and baking mixes.

The U.S. top 9 allergens

  • Wheat
  • Soy
  • Milk
  • Peanuts
  • Tree nuts (including coconut)
  • Shellfish
  • Fish
  • Eggs
  • Sesame

To prevent cross-contact at our manufacturing facilities we utilize:

  1. Consistent production equipment cleanouts that occur between runs of products which contain allergens and those which don’t
  2. Shared equipment testing to ensure no (or a negligible amount of) organic material remains on it after every cleanout
  3. Allergen testing performed at least quarterly to ensure continual success of equipment cleanout procedures

If any test fails to meet requirements, the equipment undergoes another cleanout and the process repeats until results meet cleanliness specifications.

Because of measures taken, our team is confident that unintended cross-contact doesn’t occur during production or packaging.*

Certified Gluten-Free
Our certified gluten-free products maintain the “Certified Gluten-Free” badge on front of packaging. These products are certified by the Gluten-Free Certification Organization (a program of the Gluten Intolerance Group), which currently offers the most stringent threshold for testing certification available to us. To meet GFCO’s requirements, products must be tested as gluten-free to less than 10ppm, under the FDA’s standard for gluten-free, which is set to less than 20ppm.

  • Our certified gluten-free products maintain the "Certified Gluten-Free" badge on the front of packaging. These products are certified by the Gluten-Free Certification Organization (a program of the Gluten Intolerance Group), which currently offers the most stringent threshold for testing certification available to us. To meet GFCO’s requirements, products must be tested as gluten-free to less than 10ppm. By using GFCO certification, we exceed the FDA’s standard for gluten-free, which is set to less than 20ppm.
  • To display the Certified Gluten-Free badge on our packaging, our manufacturing facilities go through the following quality controls to ensure our products meet the Gluten-Free standard:
    • Clean-Out Testing – This test validates that the production lines are adequately cleaned after each production run to remove any trace gluten material. While clean-outs remove other allergens as well, we specifically test for gluten.
      • Sampled every clean out by using GFCO approved sampling kit OR
      • Every 6 months if certifying clean out process (this requires consecutive tests with no gluten results after first five product changeovers)
    • Surveillance Audit – Once per year, our production facilities must undergo a surveillance audit to prove they’re following correct operating procedures for all clean-outs, production runs, and testing.
    • Ingredient Testing – Raw ingredients which have greater likelihood for cross-contact in the supply chain are additionally tested based on their risk level. Raw ingredients which pose the highest risk, such as oats, are tested every shipment prior to being run through production lines.
    • Finished Product Testing – Finished products are tested for gluten at a rate determined by their ingredients and past testing results of the production facility. This can result in testing as frequent as 3x per production run to once per quarter, with the latter resulting from consecutive negative gluten testing results.
    • Proficiency Testing – The labs which perform our gluten testing must periodically undergo proficiency testing with the use of independent samples to guarantee the accuracy of their work.
  • Most certified gluten-free products don’t contain any allergen ingredients. An example of limited exceptions include our Gluten-Free Single Serve mixes, some of which contain either soy or milk.
  • Many certified gluten-free products share production equipment with some allergens, including eggs, milk, soy, and wheat. Almond Flour, Coconut Flour, and Paleo Flour are produced separately.

Gluten-Free Pizza Flour & Gluten-Free Bread Flour

Gluten-FreeOur NEW Gluten-Free Pizza Flour and Gluten-Free Bread Flour is marked with a “Gluten-Free” badge on the packaging which is our guarantee to you that our products meet FDA guidelines. This means they test to less than 20ppm gluten.

To be sure our products meet the standard we use ingredients that are verified gluten-free by the manufacturer.

When we use gluten-free wheat starch as an ingredient, it goes through additional testing in a certified lab using both the R5 ELISA Sandwich and R5 ELISA Competitive methods.

Once produced, the final Gluten-Free Pizza Flour and Gluten-Free Bread Flour are tested again to ensure a strict gluten-free standard of less than 20ppm, with a target of less than 10ppm, is met for the finished product.

We follow the same stringent practices as our Certified Gluten-Free products outlined in the Certified Gluten-Free section.

King Arthur Baking Company brand items that are not part of our Signature Flour or Certified Gluten-Free lines are produced on equipment that also processes wheat, eggs, milk, soy, almonds, pecans, coconut, and sesame.

Exceptions are:

  • King Arthur brand vanillas, maple syrups, and Fiori di Sicilia do not share production equipment with any allergens.
  • Potato Pancakes are produced on equipment that also processes shellfish, eggs, fish, milk, soy, tree nuts, and wheat.

Any allergens that are used in production of the product will always be labeled with a "Contains:" statement on package or the allergen directly stated in the ingredient statement. We make digital versions of this packaging available on individual product pages as a viewable image.

Our cross-contact prevention measures focus on the U.S. top 9 allergens, but we understand that some customers may wish to avoid other unmentioned ingredients. While we’re currently unable to answer broad questions regarding other ingredients (e.g., ‘Do any of your products share equipment with mustard?’) or identify other ingredients which could share production equipment with our certified gluten-free products, we do our best to answer ingredient questions about individual products when asked. *Because we don’t currently test the products themselves for the presence of allergens (excepting gluten in our certified gluten-free line), we’re simply unable to offer a 100% guarantee against the possibility of contact outside of production. The safety of our customers is a top priority for our team, and we always recommend speaking to a doctor or dietician whenever a customer has concerns about a product being right for them.
